Dudhiyu


1 Litre milk (36 fl. oz. or 4 1/2 cups)
3 tablespoon aniseed
2 tsp. peppercorns, crushed
30 whole cardamoms, seeds removed and crushed
3 tsp. poppy seeds
1/4 - 1/2 tsp. saffron
2 tablespoon sugar
food colouring (optional)
12 almonds, crushed

DUDHIYU (Dudh means milk in Gujerati). Dudhiyu is drunk in Kenya for it's cooling effect. Try a small glass as an appetizer!

Pour milk into a large saucepan. Bring to boil. Remove from heat and allow to cool. Grind together aniseed, pepper, cardamom and poppy seeds. Add to milk. Add saffron (carefully) sugar and optional food colouring. Refrigerate for 1 hour. Strain through muslin. Sprinkle a few crushed almonds into each glass when serving.

Serves 6.
