Lobster Fancies


3/4 cup butter
1/2 lb. soft sharp yellow cheese
2 cups cooked lobster
1/4 tsp. salt
1/8 tsp. pepper
32 oz. white sandwich loaf, unsliced

Melt 1/2 cup butter in top of double boiler. Cut cheese in small pieces; add to butter. Place over hot water. Stir until cheese melted. Flake lobster; add to cheese with seasonings. Cut bread crosswise into 40 thin slices. Trim off crusts. Spread with lobster mixture. Roll up. Place rolls covered with pliofilm and damp cloth in crisper or in freezer containers in deep freeze. To serve: Preheat oven to 400 deg. F. Melt 1/4 cup butter. Cut each roll in half. Brush with melted butter. Place on cookie sheet. Bake 15 to 20 minutes or until lightly browned and hot.
