Savoury Corn Fritters
150 g plain flour; + 2 teaspoons
1/4 teaspoon baking powder
2 egg whites
75 g frozen corn; thawed
125 ml cream style corn
2 tablespoons red pepper; finely chopped
red pepper; for garnish
Mix flour, baking powder, egg whites, corns, red pepper. Spray frying pan with non stick cooking spray. Drop batter by tablespoons, forming fritters. Cook over medium heat until bottoms are lightly browned, 2-3 minutes. Flip fritters and cook 2 - 3 minutes longer. Garnish with red pepper rings.
