Homemade Vanilla Extract


8 split vanilla beans, cut 1" long
1 quart cognac (or vodka works well)

Place vanilla beans and cognac into a jar and tightly seal. Let stand in a cool dark place for 1 month. Shake bottle gently from time to time.

Pour liquid through a cheesecloth lined sieve into a clean bottle. Seal tightly and store in a cool dark place.
