Rosquillas


1/4 cup milk
3/4 cup of sugar
3 Eggs
1 stick of butter/margarine-softened
2 tablespoon of shortening or 1/4 cup of vegetable oil
a pinch of salt
1/2 tsp of lemon rind
2 tsp of baking powder
3 cups of flour

Preheat oven to 350 degrees.
Mix all ingredients. Knead dough. Make small balls of dough, then roll them into thin logs, form circles, or knots. Put on a greased cookie sheet. Bake for 30 minutes or until golden.

Optional:
Sprinkle a little brown sugar on top before baking. Rosquillas from Nicaragua use cheese in the recipe too.
