Bourbon Balls
1 cup powdered sugar
2 tablespoon unsweetened cocoa powder (Hershey's or Dutch)
1/4 cup bourbon
2 Tbsp.light corn syrup
2 1/2 cups vanilla wafers
1 cup coarsely chopped pecans
1/2 cup powdered sugar
These get even better with age.
Sift together in a medium bowl:
1 cup powdered sugar
2 tablespoon unsweetened cocoa powder (Hershey's or Dutch)
Whisk together untill well blended:
1/4 cup bourbon
2 Tbsp.light corn syrup
Stir into the cocoa mixture
Crush in a food processor or blender:
2 1/2 cups vanilla wafers
(these can also be crushed in a sealable plastic bag, using rolling pin)
Mix with:
1 cup coarsely chopped pecans
Stir the pecan mixture into the cocoa mixture. Roll into 1-inch balls between your palms. (They do not have to be even)
Roll in :
1/2 cup powdered sugar
Store at room temperature between layers of wax paper or in an airtight container for up to 3 weeks.
