Lone Star Barbecued Ribs


1 cup strong black coffee
1 cup Worcestershire sauce
1 cup ketchup
1/2 cup vinegar
1/2 cup firmly packed light brown sugar
1/2 cup Instant Minced Onion
1/4 cup butter or margarine
2 tablespoons Chili Powder
2 teaspoons Season-All Seasoned Salt
2 teaspoons Instant Minced Garlic
1 teaspoon Ground Mustard
1/2 teaspoon Ground Red Pepper
10 pounds spareribs -- (4 racks if large, meaty ribs)

Combine all ingredients except ribs in 2-quart saucepan. Stir to mix well. Heat and simmer 30 minutes, stirring occasionally. Half-fill large stockpot with water and heat to boil. Add ribs, cover, and boil 10 minutes. Drain thoroughly. Preheat oven to 350xF. Arrange ribs in single layer on racks in roasting pans. Brush both sides of ribs with sauce. Cook in preheated 350xF oven 1 1/2 hours, turning and brushing with sauce every 15 to 20 minutes. As an alternative, ribs may be cooked on grill over low fire. Place ribs on grill rack and brush with sauce. Cook, turning occasionally and brushing frequently with sauce, until meat is thoroughly cooked. Time will depend on heat and distance of meat from coals.

Makes 12 servings, 4 to 6 ribs each
