Persimmon Bars


1 3/4 c. flour
1 tsp. baking soda
1 tsp. ground nutmeg
1 tsp. ground cinnamon
1/4 tsp. ground cloves
1 c. sugar
1/2 c. canola oil
1 large egg
1 persimmon, peeled and pureed

Preheat oven to 350 degrees. Lightly grease a 9 inch square baking pan. Combine flour, baking soda and spices. In a large bowl, beat the sugar and oil. Beat in the egg. Beat in the persimmon puree.Gradually blend in the dry ingredients. Spread the mixture evenly in the prepared pan. Bake 20-25 min., until lightly colored on top and firm to the touch. Cool in pan on a wire rack.

Yield: 4-5 dozen
