Biscotti
1/2 cup coarsely chopped almonds
3/4 cup sugar
2 tsp anise extract
2 tsp orange zest
1 1/2 tsp baking powder
1/3 cup butter or margarine
2 eggs
2 1/4 cup flour
1/4 tsp salt
Cream butter or margarine and sugar together until light and fluffy. Beat in eggs, anise flavor and orange zest. Combine flour, baking powder and salt in a bowl. Add to butter/sugar mixture. Add almonds. Grease baking sheet. Form dough into two logs about 2" x 12" and place on sheet. Bake at 350o for about 25 minutes or until golden brown. Let cool 5 minutes before slicing (use bread knife) about 1/2" thick. Lay slices back on baking sheet and bake for another 10 minutes per cut side.
Yields approx. 3 1/2 dozen.
