9 Grain Bread


1-1/4 cups warm water
1/2 cup warm milk
4 tablespoons oil, any kind
4 tablespoons honey
1 egg
2-1/2 teaspoons active dry yeast
3 tablespoons gluten
3 tablespoons wheat germ
1/4 cup barley flour
1/4 cup rye flour
1/3 cup cornmeal
1/3 cup bran (any kind)
1-1/2 cups whole wheat flour
1-1/2 cups bread flour
1-1/2 teaspoons salt

Dissolve yeast in 1/2-cup warm water, let stand until foamy. Combine dry ingredients in a large bowl and mix well. Slowly cut in wet ingredients and form the dough into a ball

When dough has taken the flours, add 2 tablespoons each:

flax seeds
caraway seeds
sunflower seeds,
poppy seeds
sesame seeds

finally:

1/4 cup chopped nuts of your choice
1/4 cup raisins

Get two pans ready, greased. Knead dough until smooth, let rise in a large bowl 2 hours. Make 2 loaves in pans; let rise another hour. Bake at 375F for 35 or 45 minutes. Turn out on rack to cool.
