Brown Nut Bread


2 1/4 cups whole wheat flour
1 3/4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
2 eggs, beaten
2 cups sour milk*
1/2 cup molasses
1/3 cup honey
2 teaspoons finely shredded orange peel or lemon peel
1 cup chopped walnuts
3/4 cup raisins

In a large mixing bowl, stir together whole wheat flour, all-purpose flour, baking soda, and salt; set aside. In another mixing bowl, combine eggs, sour milk, molasses, honey, and orange or lemon peel; add to dry ingredients, stirring till well combined. Fold in chopped walnuts and raisins. Turn batter into two greased 8 x 4 x 2-inch loaf pans. Bake in a 350 degree oven about 55 minutes or till a wooden toothpick inserted near center comes out clean. Cover with foil the last 15 to 20 minutes. Cool bread 10 minutes in pans. Remove from pans; cool thoroughly on wire racks.

Makes 2 loaves.

* To make sour milk: Place 2 tablespoons lemon juice or vinegar in a 2-cup glass measure. Stir in enough whole milk to make 2 cups liquid. Let stand 5 minutes.
