Easy Banana Bread
1/2 cup (1 stick) butter, softened
1/2 cup sugar
2 soft bananas
2 eggs
1 1/2 cups flour
1 1/2 teaspoons baking powder
(Or you can just use self-raising flour but I don't know if they have that wherever you are so I've converted it)
Cream the butter and sugar. You can pre-mash the bananas but if they're really soft I just drop them in and leave the mixer run. Add bananas and eggs, beat, then add flour and baking powder. Don't overmix after you add the flour or it will be tough. Pour into greased lined loaf tin and bake at 350F/180C 35-40 minutes. I usually double this and freeze one. Sometimes I add a big handful of broken pecans too.
