Fruit Damper


3 cups self raising flour,
1/2 tsp salt,
1 tsp mixed spice,
60g (2oz) butter or margarine,
1/3 cup sugar,
1 egg
3/4 cup milk,
3/4 cup sultanas.

ICING
1 cup icing sugar (sifted),
1 tablespoon warm water,
food colouring (your choice)
1 handful crushed walnuts.

Combine the flour, salt and spice in a bowl and rub butter in till it resembles finr breadcrumbs. Add the sugar, egg, milk and sultanas and mix into a soft managable dough, shape into a ball flat round shape (15-20cm)(6-8") and using a sharp knife, cut almost through (8 wedges). Place on a greased baking sheet and brush with milk. Bake at 180c (350f) for 30-40 minutes or till cooked.

The Icing:
Combine the sugar and water, add enough food colouring to make a pale colour, drizzle the icing over the top of damper and decorate with crushed walnuts. Serve with lashings of butter, tea or coffee.
