Hawaiian Bread


1 can crushed pineapple
1 package (10 ounces) moist coconut
4 eggs
1 1/2 cups sugar
4 cups all purpose flour
2 teaspoons salt
2 teaspoons baking soda

Preheat oven to 325 degrees. Grease three 5 x 9 inch loaf pans. Combine pineapple and coconut in mixing bowl.

Add eggs (beaten until light) and sugar. Mix well. Sift flour, measure, then sift again with salt and baking soda. Add to the first mixture. Mix until well blended. Pour into three greased 5 x 9 inch loaf pans.

Bake in 325 degree oven for 1 hour. Remove from oven and turn out on wire racks. Serve hot or cold.
