Honey Wheat Bread
2 1/2 c whole wheat flour
2 1/2 c unbleached flour
2 tsp salt
2 pkg dry yeast
1 c water
1/2 c honey
1/4 c butter
1 c cream style cottage cheese
2 eggs
1/2 c rolled oats
1 c chopped nuts (I like almonds and pecans)
Combine 2 c whole wheat flour, salt, and yeast. Blend with a wire whisk. In a sauce pan, add water, honey, butter and cottage cheese. Heat until it reaches 120* - 130* . Add this to the flour mixture along with the eggs. Blend on low speed until it is moistened. By hand, stir in the rest of the flour--Adding the white flour one cup at a time and mix each time. Next, add the oats and nuts. Add enough white flour till the dough pulls away from the sides of the bowl. Knead dough for 10 minutes or until it is stretchy. Place dough into a well greased bowl and turn the dough around to get it greased as well. Cover and let rise fr 1 hour. The rising room temp should be at least 80*. Once it has risen, punch it down and divide the dough. Mold the 2 parts into balls. Take your bread pans and place it over the top of the dough balls so it looks like it is hiding. Let rise for 20 minutes. Place the dough into the bread pans and let rise for 1 hour or until it ahs doubled in size. Bake for 35 - 40 minutes in a 375* oven. To check for doness, tap the loaves. It will make a hallow sound when done. Once you hear this sound, immediately take the bread from the pans and place them on wire racks. Take a stick of butter and "paint" the top of the loaves while they are still hot.
Yields 2 loaves.
