No Fat Apricot Nut Bread


2 1/2 cups all purpose flour, sifted
4 teaspoons baking powder, sifted
4 egg whites
3/4 cup sugar
1 can apricot halves in juice
lite evaporated milk
1/4 cup applesauce
1/2 Tablespoon walnut extract

Preheat oven to 350: F. Sift flour and baking powder into large bowl; set aside. In separate large bowl, beat egg whites with electric mixer on high until light. Add sugar gradually; mix well; set aside.Drain apricot juice into measuring cup and add enough milk to juice to make 1 cup, set apricots aside. Stir juice mixture into egg mixture; mix well. Add applesauce to egg mixture, mix completely. Chop apricots and add to egg mixture. Stir in walnut extract. Gradually add flour to egg mixture one cup at a time and mix well. Pour batter into nonstick loaf pan. Bake for 1 hour and 15 minutes. Cool on rack. Remove from pan. Serve warm.
