Whole Wheat Bread


2 cups milk
2 cups lukewarm water
1/3 cup honey or molasses
4 cups white flour
6 cups whole wheat flour
4 teaspoons salt
1/2 cup wheat germ
3 packages yeast
1/3 cup melted shortening

Scald milk, add molasses and salt and cool. Dissolve yeast in the warm water. Add to milk mixture. Add 1/2 of each kind of flour and all of wheat germ. Ad melted shortening and all the white flour and enough whle wheat flour to make a stiff dough. Cover and set in warm place and let rise about one hour. Knead well, using as little flour as possible. Cover and let stand unil almost double in bulk (approximately 40 minutes). Put in greased pan and let stand 30 minutes. Bake at 375 degrees F. about one hour. Makes 4 small or 3 large loaves.
