Zucchini Bread


3 eggs
3 cups all-purpose flour
1 cup oil
3 teaspoons cinnamon
2 cups sugar
1 teaspoon soda
2 cups grated zucchini
1/4 teaspoon salt
2 tablespoons vanilla
1/2 cup chopped nuts

Beat eggs until foamy. Add oil, sugar, zucchini and vanilla. Mix well. In seperate bowl, mix flour, cinnamon, soda and salt. add to mixture. Mix well. Then add nuts. Makes two loaves. Bake at 325 degrees F. for 1 hour or until done.
