Zucchini Pecan Quick Bread

1-1/2 cups bread flour
3/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 large eggs
1/2 cup vegetable oil
1-1/2 cups lightly packed and shredded, unpeeled zucchini
1/2 cup pecans, chopped
grated zest of 1 large orange

Preheat oven to 350F. Coat 9 x 5 x 3 loaf pan with vegetable spray. In a large bowl mix together flour, sugar, baking soda, baking powder, salt, and cinnamon. In smaller bowl whisk together eggs and oil, then stir in zucchini, pecans, and orange zest. Pour egg mixture into flour mixture and mix together by hand. This will be a stiff batter. Spoon into prepared loaf pan and bake for 50 minutes until tester comes out clean. Cool slightly before serving.
