Banana Nut Bread 2 for ABM/Oven


1-3/4 cups sifted flour
2 teaspoons baking powder
1/4 teaspoon soda
1/3 cup shortening
2/3 cup sugar
2 eggs, well-beaten
1 cup mashed ripe bananas (2-3 bananas)
1/2 cup coarsely broken walnuts

Preheat oven to 350F. Sift together the flour, baking powder, soda and salt. Cream the shortening, add the sugar gradually and continue working until light and fluffy. Add the eggs and beat well. Add the flour mixture alternately with the bananas and nuts, a small amount at a time, beating after each addition until smooth. If making muffins, fill muffin pan cups about 2/3 full. Bake about 20 minutes or until golden brown. Loosen with spatula. Rremove from pan and cool on wire racks.
