Sourdough Onion Rye for ABM (multi-recipe)
1-lb. Loaf:
1/2 cup starter
1/2 cup water or milk
1/4 cup diced onion
1 tablespoon fruit juice concentrate
2 tablespoons molasses or honey
1/2 teaspoon salt
2 teaspoons anise or caraway (optional)
1 to 2 tablespoons gluten
1/2 cup rye flour
2 cups whole wheat flour
1 teaspoon active dry yeast
1-1/2 lb. Loaf:
3/4 cup starter
3/4 cup water or milk
1/3 cup diced onion
1-1/2 tablespoons fruit juice concentrate
3 tablespoons molasses or honey
3/4 teaspoon salt
1 tablespoon anise or caraway (optional)
1-1/2 to 3 tablespoons gluten
3/4 cup rye flour
3 cups whole wheat flour
1-1/2 teaspoons active dry yeast
2-lb. Loaf:
1 cyp starter
1 cup water or milk
1/2 cup diced onion
2 tablespoons fruit juice concentrate
1/4 cup molasses or honey
1 teaspoon salt
1-1/3 teaspoons anise or caraway (optional)
2 to 4 tablespoons gluten
1 cup rye flour
4 cups whole wheat flour
2 teaspoons active dry yeast
Follow your ABM mfg.'s directions for preparation of this type of bread.
