Cheese Rarebit with Mustard or Tansy Flowers
4 slices Bread, whole wheat - thick slices
2 Tablespoons Butter
2 Tablespoons Mustard, wholegrain
1 cup Cheese, Cheddar; grated
Tansy flowers and or Mustard flowers
Yield: 2 servings
Lightly toast the bread on both sides, then, while it is still hot, butter each slice and spread with a good layer of mustard. Spread over the grated cheese and sprinkle on a few flowers.
Toast under the grill until the cheese is bubbling and serve at once. The flowers give this old favorite a very special and unique flavor. Serve the rarebit as a snack for lunch, with a crisp green salad.
