Finnish Kropsua


2 eggs
2 cups milk
1 cup flour
1/2 tsp salt
1/4 cup butter (or margarine)

Melt butter in a 12 x 8 x 2 inch pan in hot oven. Break eggs into a bowl. Add milk alternately with flour mixed with salt. Lastly add butter. Pour into the sizzling pan. Bake 40 minutes in a 400 degree F oven.

The secret of success lies in having a thin batter, beating only enough to mix, and having a very hot pan to bake it in. Serve with pork sausage and lingonberries or maple syrup, or cranberries, if lingonberries are not available.

The word, kropsua, does not seem to be known much today in Finland. This food is better described as oven pancake.
