Potato Pancakes


4 large potatoes
2 eggs
1 tsp. salt
complete pancake mix

Peel potatoes. Grate potatoes into a bowl of cold water to prevent darkening. Drain thoroughly but not dry. Add beaten eggs and salt. Stir. Add enough pancake mix to blend well and drop onto greased griddle.
