Swedish Oven Pancake


1 jar (12 oz.) lingonberry or preserves or jelly or can substitute one large can whole cranberries
3 strips bacon, cut up
2 tablespoon sugar
3 eggs
1/2 pt. whipping cream
1 cup flour
3/4 tsp. salt
2 cup milk

In large frying pan, about 9-inches, oven safe, sauté bacon until crisp. Do not pour off drippings. Sift flour; measure, then sift again with sugar and salt. Beat eggs lightly with milk. Stir in dry ingredients and mix until smooth. Pour batter over crisp bacon and bake in 375 degrees oven for 30 minutes or until set and golden brown.

Cut in wedges and serve immediately with a berry-cream topping, jam or jelly.

Berry-Cream Topping:
Whip cream until stiff, then fold in lingonberries.

Serves 4 to 6.
