Low Fat Double Chocolate Chip Fudge Brownies


1 cup unsweetened applesauce
Nonstick butter-flavored spray
1 cup all-purpose flour
2/3 cup unsweetened cocoa powder
1/2 teaspoon salt
1 large egg
2 large egg whites
2 cups sugar
1 teaspoon vanilla extract
1/4 cup mini-morsel semisweet chocolate chips

Place a strainer over a bowl deep enough so the bottom of the strainer doesn't touch the bottom of the bowl. Place the applesauce in the strainer and set aside to drain for 15 minutes; you should have 1/2 cup drained applesauce. Discard the liquid. Place the oven rack in the center of the oven and preheat the oven to 350 degrees. Lightly spray an 11-by-7-inch baking dish with the butter-flavored spray. In a medium bowl, whisk together the flour, cocoa and salt; set aside. In a large mixing bowl, whisk together the egg and egg whites until bubbly. Add the sugar, drained applesauce and vanilla and stir until the sugar has dissolved.

Stir in the flour mixture and chocolate chips until the dry ingredients are just moistened. Pour the batter into the prepared pan and bake for 30 minutes for a fudgy center, 35 minutes for a cakey center. Remove from the oven and cool on a rack, cut into 2-inch squares and serve.

Makes 15 squares; based on 1 brownie.
