Strawberry Butter
1/2 cup fresh strawberries, washed and hulled
1/2 cup unsalted butter (not margarine), at room temperature
1 teaspoon confectioners sugar
1 teaspoon fresh lime juice
Fresh fruit combined with creamy butter makes a treat that is delightful with breads at breakfast or tea time. Makes about 2/3 cup.
In a food processor or blender, puree the strawberries. In a medium-size bowl, with an electric mixer on High, beat the butter until creamy. Add the sugar, lime juice, and strawberry puree and continue beating until the mixture is no longer separate and is well blended.
