Almost Fat Free Chocolate Cupcakes

1 1/3 cs, all-purpose flour
1/2 cups unsweetened cocoa powder
1 1/2 tsps. baking powder
1 1/2 tsps. baking soda
2 tsps. salt
3/4 cups dark brown sugar, packed
1/4 cups applesauce, cinnamon flavored
1 egg beaters 99% egg substitute or equiv. to 1 egg
1 egg white
1 tablespoon oil
1 teaspoon vanilla extract
12/3 cups skim milk
confectioner's sugar, optional
Preheat oven to 350 degrees.
Line 12 muffin cups with paper liners. Combine flour, cocoa, baking powder, soda and salt. Beat the next six ingredients until combined, about 1 minute. Stir in flour mixture alternately with milk until just combined. Pour batter into muffin cups.
Bake 22 to 25 minutes or until toothpick comes out clean. Remove cupcakes from pan; cool on wire rack 30 minutes. Sprinkle with sugar, if desired.
Makes 12 cupcakes.
