Apple Cake 2


2 eggs
2 cups brown sugar
1 cup cooking oil
1 teaspoon vanilla
1 teaspoon cinnamon
1 teaspoon baking soda
2 cups flour
3 cups un-peeled apples cut in small pieces
1 cup coarsely chopped nuts

Preheat oven to 300 degrees. Grease 9 inch x 13 inch baking pan.

In a large mixing bowl combine eggs, sugar, oil and vanilla. Mix well. Measure flour into a small bowl and mix in cinnamon and baking soda. Dump dry ingredients into egg, sugar, oil mixture and mix until well blended. Stir in apples and nuts and pour into greased 9 inch x 13 inch pan. Bake at 300 degrees for 1 hour. Serve warm or cold, excellent with real whipped cream.
