Apple Crunch Coffee Cake


Cake
4 cup baking mix
1 1/3 cup Milk or cold water
6 tablespoon Sugar
2 Eggs
2 large apples pared and thinly sliced

Streusel Topping
1 cup baking mix
1 cup Brown sugar; packed
1 1/2 tsp Ground cinnamon
1 tsp Ground nutmeg
1/2 cup Firm margarine or butter
1/2 to 1 cup chopped nuts, optional

To prepare:
Mix baking mix, brown sugar, cinnamon and nutmeg, cut in margarine until crumbly.

Heat oven to 400 degrees F. Grease 13x9x2 inch baking dish. Mix together baking mix, milk, sugar, and egg; beat vigorously 30 seconds. Spread half of the batter in pan. Arrange apple slices on batter. (This would be where the raisins get put if you used them) Sprinkle with half of the Streusel Topping. Spread remaining batter over apple slices; sprinkle with remaining topping. Sprinkle with nuts if desired. Bake until wooden pick inserted in center comes out clean, about 35 minutes; cool.

NOTE:
I made this with a baking mix I prepared from a recipe out of this very newsgroup, and it turned out a real favorite for my whole family. I actually doubled the original cake proportions and made half again as much streusel topping, and that is reflected above. It seems like a lot of batter but it fills a 13x9 pan perfectly.
