Apple Nut Coffee Cake


Serving Size : 18

STREUSEL TOPPING
1 cup walnuts, chopped
2/3 cup all-purpose flour
1/4 cup packed brown sugar
4 tablespoons butter
1 teaspoon cinnamon

COFFEE CAKE
3 golden delicious apples
sugar
1 cup butter, softened
116 ounces sour cream
2 1/2 cups all-purpose flour
1 tablespoon baking powder
2 teaspoons baking soda
2 teaspoons vanilla extract
4 large eggs

STREUSEL TOPPING:
In a small bowl knead together walnuts, 2/3 cup flour, brown sugar, butter and cinnamon until they form large pieces.

COFFEE CAKE:
Preheat oven to 350 degrees and grease a 14 X 10 inch roasting pan. Peel, core and thinly slice apples. Place in a large bowl and toss with 2 tablespoons granulated sugar.

In a large mixer bowl combine butter with 1 1/2 cups granulated sugar and beat, at medium speed, until light and fluffy. Add sour cream, flour, baking powder, baking soda, vanilla and eggs and beat, at low speed, until blended, scraping down sides of bowl. Beat 1 minute at medium speed.

Spread batter n prepared pan, arrange apple slices on top and sprinkle with Streusel Topping. bake 45 - 50 minutes or until cake pulls away from sides of pan. Cool, in pan, on wire rack 10 minutes
