Banana and Cinnamon Snacking Cake


375 g plain flour
125 g caster sugar
2 teaspoons baking powder
1 teaspoon bicarbonate of soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
250 ml natural yogurt
2 medium ripe bananas; mashed
2 tablespoons vegetable oil
1 large egg
1 teaspoon vanilla extract
icing sugar

Yield: 9 servings

Preheat the oven to 200 C / 400 F / Gas 6. Grease a 23 cm square baking tin. Combine the dry ingredients in a large bowl. Whisk together the wet ingredients in a medium bowl. Pour over the dry ingredients and stir gently until just blended. Do not overmix. Spread the batter in the prepared tin. Bake until the top is light brown and the sides pull away from the tin, (about 20 minutes). Sprinkle with icing sugar.
