Basic Cake Mix


8 cups all-purpose flour
5 cups sugar
1/4 cup baking powder
1 tablespoon salt
2 cups shortening that does not require refrigeration

In a large bowl stir together the flour, sugar, baking powder, and salt. With pastry blender, cut in shortening until mixture resembles very fine crumbs. Divide mix into 5 equal portions (about 19 oz. or 3-1/2 cups each). Place in airtight containers; label. Store in a cool, dry place up to 6 weeks. (Or place in freezer containers; seal and freeze up to 6 months. To use, allow mix to come to room temperature.)

Makes 17-1/2 cups (5 portions) mix.
