Chocolate Oatmeal Cake


Serving Size : 24

1 1/2 cup water, boiling
1 cup oatmeal, quick
1/2 cup shortening
2 cup sugar
2 large eggs
1 teaspoon vanilla extract
1 cup flour
1/2 teaspoon salt
1 teaspoon soda
1/2 cup cocoa

Coconut Glaze
2 tablespoon butter
2 cup milk
2 cup coconut, flaked
1 cup powdered sugar

CAKE:
Pour water over oatmeal and let stand.
Mix shortening, sugar, eggs, and vanilla. Combine with oatmeal.
Add flour, salt, soda, and cocoa. Blend well.
Bake at 350F for 35 minutes in a greased and floured 9x13 inch pan. Cool.
Frost with Coconut Glaze.

COCONUT GLAZE:
Mix ingredients in saucepan.
Boil until thickened, about 5 minutes.
Pour on cooled cake.
