Low Fat Apple Cake


1/4 cup soft margarine
2/3 cup brown sugar, packed
1 1/2 cups buttermilk
1 cup all-purpose flour
1 cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
1 tablespoon cinnamon
1/2 tsp salt
2 1/2 cups apples, cored and finely chopped (about 2 medium apples)

TOPPING:
1/4 cup brown sugar, packed
2 tsp cinnamon
2 tablespoon chopped nuts

In large bowl, combine margarine and sugar using electric mixer. Beat in buttermilk. Add flours, baking soda, baking powder, cinnamon, salt and apples and mix to combine. Spread evenly in lightly-greased Bundt pan or 8- or 9-inch-square baking pan. Bake at 350 degrees for 40 to 45 minutes or until toothpick inserted in centre comes out clean.
