Low Fat Chocolate Snack Cake For A Crowd
1 1/2 pints (2 pounds) canned plums
2 boxes (1 pound, 2.25 ounces each) chocolate cake mix
12 (1 1/2 cups) egg whites
1/4 cup vegetable oil
1 cup chocolate mini morsels (optional)
2 tablespoon powdered sugar (optional) vegetable cooking spray
Measure 2 1/4 cups drained, pitted plums. Puree Plums and add 3/4 cup Plum liquid to measure 1 1/2 pints. In a mixer bowl with flat beater attachment, combine cake mix, Plum mixture, egg whites and oil. Beat on medium 2 minutes longer. Mix in chocolate morsels. Spread evenly in 26" x 18" x 1" sheet pan coated with cooking spray. Bake at 350 degrees F about 20 minutes or until wooden pick inserted in center comes out clean. Cool. Dust with powdered sugar before serving, if desired.
Yield: 48 servings, 3 inch square.
