Old Fashioned Kentucky Jam Cake


1 cup butter
1 cup sugar
1 cup each of three fruit preserves, fig, strawberry and blackberry recommended, but substitutes are fine
5 eggs separated
1 tablespoon baking soda
1 cup buttermilk
3 cups sifted flour
1 cup finely chopped nuts
1 tablespoon allspice
1 tablespoon cinnamon

Preheat oven to 400 degrees. Cream together butter and sugar until light, add preserves, beat egg yolks well, and add to jam mixture. Beat until smooth. Stir baking soda into buttermilk, add to jam mixture alternately with flour, mixing well after each addition. add nuts and spices, mix well. Beat egg whites until stiff and fold into batter. Cook in 3-9inch round cake pans in a 400 degree preheated oven 40-50 minutes, until done. Top with


Caramel Frosting


1 cup butter
3 cups sugar
1.5 cups milk

In a heavy skillet combine butter and sugar cook over high heat stirring constantly until lightly browned, gradually add milk, and cook over very slow heat until slightly warm. Beat until smooth but not thick enough to hold its shape. Spread 2 tablespoon frosting between layers. Beat the rest of the frosting until stiff enough to hold shape and frost the rest of the cake. It is best if it sits for 24 hours in the refrigerator to mellow. Cut into very thin slices and enjoy !
