Orange Pound Cake
Vegetable cooking spray
1 3/4 cups sifted cake flour
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup sugar
1/2 cup vegetable oil
1/2 cup unsweetened orange juice
1 teaspoon grated orange rind
4 egg whites, stiffly beaten
Coat the bottom of an 8 1/2 x 4 1/2 x 3-inch loaf pan with cooking spray; dust with flour, and set aside.
Combine flour and next 3 ingredients in a large bowl. Add oil and orange juice; beat at medium speed of an electric mixer until batter is smooth (batter will be thick). Add orange rind and about 1/3 of egg whites, and stir gently; fold in remaining egg whites.
Pour batter into prepared pan. Bake at 350 degrees for 45 minutes or until a wooden pick inserted in center comes out clean. Cool in pan 10 minutes; remove from pan, and cool on a wire rack.
Yield: 16 servings.
