Parkin 3


1/2 cup butter
2/3 cup molasses
2/3 cup rolled oats
1 cup all purpose flour
1 tablespoon sugar
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon lemon rind; finely grated
2/3 cup milk

Heat butter and molasses in a double boiler until the butter has melted: Mix oats, flour, sugar, ginger, cloves, salt, baking soda and lemon rind in a separate bowl. Add milk alternately with the melted butter mixture. Combine until all the dry ingredients are just moist. The batter will be thin. Bake in a greased 8- x 8-inch pan in oven preheated to 350 F for about 35 minutes or until cake begins to pull away from sides of pan.
