Upside Down Gingerbread
1-1/2 sticks margarine, melted
1/2 cup molasses
1/4 cup brown sugar
1-1/4 cups flour
1 cup chopped apples
1/2 teaspoon cinnamon
1/4 cup white sugar
1/2 teaspoon ginger
1 egg
1/4 teaspoon salt
1 teaspoon soda
1/2 cup hot water
Put 1 stick melted butter in an 8-inch square pan. Cover with brown sugar, then add chopped apples. In a saucepan, melt 1 stick margarine, cool. Add white sugar and egg. Beat well. Beat soda into molasses until it foams to top of cup. Sift together flour, cinnamon, ginger and salt. Add alternately to first mixture with hot water. Bake at 350 degrees F. for 45 minutes. Serve warm with topping or ice cream.
