Divinity 2


2 2/3 cup sugar
2/3 cup light Karo syrup
1/2 cup water
2 eggs whites, stiffly beaten
1 tsp. vanilla
2/3 cup broken nuts (optional)

In a heavy pan add 2 2/3 cup sugar, 2/3 cup light Karo syrup, 1/2 cup water. In mixer bowl, 2 eggs whites, stiffly beaten. After doubled in volume, add 1 tsp. vanilla, 2/3 cup broken nuts (optional). Mix sugar, syrup and water in a saucepan. Stir over low heat until sugar dissolves. Cook without stirring to 260F (hard ball stage). Remove from heat and pour, beating constantly, in a fine steam into the beaten egg whites. Add vanilla and continue beating until mixture holds its shape and become slightly dull. Fold in nuts. Drop quickly from a buttered spoon onto waxed paper into individual peaks or spread in a buttered pan and cut into 1 inch square.
