Southern Pralines
1-1/2 (one and one-half) cups of firmly packed light brown sugar
2/3 (two-thirds) cup of half and half
Dash of salt
2 tablespoons of butter or margarine
1-1/2 (one and one-half) cups of pecan halves, toasted
Combine sugar, half and half and salt in a three-quart casserole; mix well. Stir-in butter.
Microwave on high for 7 to 9-1/2 (nine and one-half) minutes or until mixture reaches soft ball stage (235 degrees), stirring once.
Stir-in pecans; cool about one minute. Beat by hand until mixture is creamy and begins to thicken (about three minutes).
Drop by the tablespoonful onto wax paper; let stand until firm.
Makes about two dozen pralines.
