Marinated Goat Cheese With Crumb Crust


1/2 cup extra-virgin olive oil
2 tablespoons fresh oregano, chopped; or 2 teaspoons dried
Freshly ground pepper to taste
1/2 pound goat cheese, cut into 1-inch-thick slices
1 cup fresh bread crumbs
Salt to taste
Crackers or baguette slices

Combine the olive oil and oregano. Season generously with pepper. Place cheese slices in a baking dish large enough to hold them in a single layer. Pour the oil mixture over them. Cover and refrigerate for at least 3 hours. Preheat oven to 325 degrees. Place bread crumbs in a shallow bowl or on a plate. Remove cheese slices from oil and dredge in bread crumbs. Place on a foil-lined baking sheet and bake about 5 minutes, until the cheese begins to bubble around the edges.

Makes about 6 servings.
