Austrian Style Cheesecake
4 digestive biscuits; crushed
450 g cottage cheese; sieved
150 ml milk
2 eggs; separated
50 g cornflour
1 teaspoon vanilla essence
150 g caster sugar
icing sugar; to decorate
Yield: 10 servings
Grease sides of a 4 cm deep, 24 cm loose bottomed flan ring. Sprinkle biscuits over the base. Blend cottage cheese, milk, egg yolks, cornflour and essence in a bowl. Whisk egg whites until stiff and fold alternately with the sugar into the cottage cheese mixture. Pour slowly over the biscuits and bake at 180 C / 350 F / Gas 4 for 30 minutes or until set. Cool then remove from the tin. Serve sprinkled with icing sugar.
