Baked Cheesecake


12 digestive biscuits; crushed
110 g unsalted butter; melted
225 g cream cheese
6 tablespoons creme fraiche
1 large egg; + 1 yolk, lightly beaten
2 tablespoons honey

Yield: 6-8 servings

Pre-heat oven to 170 C / 325 F / Gas 3. Mix the biscuits with the butter and press into a shallow flan tin 20 cm (8 inch). Beat the cream cheese and fold in the remaining ingredients in the order given. Pour over the base and bake in the oven for 30 minutes until set. Leave in the tin for 10 minutes and serve. Alternatively this can be served cold.
