Cajun Style Chicken Breasts


2 teaspoons butter
4 boneless, skinless breasts halved
1 large red onion, chopped
1 green bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
2 cups Spicy V-8 Vegetable Cocktail juice
1/2 tsaspoon Texas Pete Hot Sauce
1/2 teaspoon Chili powder
1/4 teaspoon cayenne pepper
1/4 teaspoon dried thyme
1 teaspoon garlic flakes
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice

Melt butter in a heavy nonstick skillet. Add chicken and brown quickly on both sides over high heat. Remove to a platter. Add onion and bell peppers. Cook over moderate heat until soft. Add V-8 Juice, Texas Pete and seasonings, return chicken to pan. Simmer until sauce is thick. Serve over Yellow Rice, with a side dish of Re fried beans with a little bit of fresh green onions on top. A slice of home made sourdough bread on the side.
