Lemon Dill Chicken
2 tablespoons margarine or butter
6 small skinless boneless chicken breast halves (about 1 1/2 pounds)
1/4 cup dry white wine or water
1 tablespoon lemon juice
1 teaspoon chopped fresh or 1/8 teaspoon dried dill weed
1/4 teaspoon salt
1/2 lemon, thinly sliced
2 green onions with tops, sliced
Place margarine in rectangular dish, 11 x 7 x 1 1/2 inches. Microwave uncovered on high for 20-30 seconds, or until melted. Arrange chicken breast halves in margarine. Cover tightly and microwave 4 minutes. Mix wine, lemon juice, dill weed and salt; pour over chicken. Place lemon on chicken. Cover tightly and microwave 4 to 6 minutes or until juices run clear. Let stand covered 5 minutes, sprinkle with onions.
