Peanut Butter Marmalade Chicken
1 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon ginger
4 small chicken breasts, skinned
1/2 cup peanut butter
2/3 cup orange marmalade
6 tablespoons orange juice
2 tablespoons lemon juice
2 cups round buttery cracker crumbs
1/4 cup vegetable oil
Combine salt, pepper and ginger; rub into chicken. Combine peanut butter, marmalade, orange juice and lemon juice. Dip in peanut butter mixture; coat well with cracker crumbs. Pour oil into 13x9x2-inch baking dish; arrange chicken in dish. Bake at 350 degrees for 30 minutes. Turn chicken and cook 30 additional minutes or until done.
Yield 4 servings.
