Sorrento's Chicken Parmesan


Serves 1

1 (8-ounce) chicken breast
Flour
Salt
Pepper
Garlic powder
1 egg
2 tablespoons milk
Homemade bread crumbs
Grated romano cheese
Fresh parsley
Olive oil
Tomato sauce (see recipe)
Sliced mozzarella cheese

Pound chicken breast to an even thickness. Combine flour with salt, pepper and garlic powder. Dust chicken with flour mixture and shake off excess. Combine egg and milk in a shallow bowl. Dip floured chicken breast in egg mixture. Combine bread crumbs, romano cheese and fresh parsley in another bowl. Dredge chicken in crumb mixture.

Fry the chicken breast to perfection in olive oil. Top breast with tomato sauce and mozzarella cheese. Place in a 350-degree oven for a few minutes, until cheese browns to bubbly perfection.
