Diabetic Super Chocolate Chip Cookies


1 packet Butter Buds Mix, liquefied (see note)
1/4 cup vegetable oil
1 cup granulated sugar
2 eggs
1 teaspoon vanilla
1 cup sifted all-purpose flour
1 cup sifted whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1 package (6 ounces) chocolate chips
2 cups 40% bran flakes cereal

Preheat oven to 425 F. Spray 2 cookie sheets with nonstick cooking spray.

In large mixing bowl, combine Butter Buds, oil and sugar. Beat in eggs and vanilla. Mix dry ingredients; add to creamed mixture. Stir in chocolate chips and cereal.

Drop dough by rounded teaspoons onto prepared cookie sheets. Bake 8 to 10 minutes. Remove cookies immediately to cooling racks.

Makes about 4 dozen cookies

Per Serving (2 cookies): 144 calories, 3 g protein, 24 g carbohydrate, 5 g fat, 1 g saturated fat, 18 mg cholesterol, 161 mg sodium.

Diabetic Exchanges: 1-1/2 starch, 1 fat
